Kolrabi "Potato" Salad


What you'll need:

Pressure Cooker

A Head of Kolrabi

Vegan PP mayonaise

2 avocados

a few stalks of celery

1 diced onion

sea salt

1 tablespoon tahini (optional for mayo)


seasonings to taste

Crushed Garlic

Dill

lemon juice




1) Cut the Kolrabi in large chunks and cook in pressure cooker for about an hour until it's soft like a cooked potato.

2) Dice the celery, onions, cooked kolrabi,

3) Add vegan PP Mayo ( blended avocados, 1teaspoon of lemon juice or vinegar, dash of salt,) add the dill to this mixture


Mix everything together and garnish with chives!
