I had extra Hearts of Palm infused with seaweed and Kelp leftover from the "Crab" Cake ( see Crab cake recipe) recipe and decided to whip up a mock 'Tuna' salad using just the chopped onion, celery, and vegan mayo. I think it turned out great! Even the fresh cabbage leaf added to the flavor...The texture wasn't quite 'Tuna-y' - more like the crab- but the flavor was there. Honestly tho, I personally didn't need for the texture to be so meaty anyway, so I'm happy with this. It's quick to make, and I can put a lump of in atop a salad or in a wrap! No cooking required!
