Creamy Cauliflower Broccoli Soup!

Minimal Ingredients; Full Flavor! When you think of a creamy soup, some kind of stock, cream, or thickening agents probably comes to mind, but not for this!


For this recipe I had a pretty hefty bag of fresh cauliflower (6 cups raw) and broccoli (4 cups raw) and a few leftover carrots (1/2 cup) I didn't want to go to waste.


5 minutes in Pressure Cooker:

3 cups water

4 cups of the cauliflower

2 cups broccoli

1/2 cup carrots


When it's done it will be really soft, blend it with an immersion blender, or any blender for that matter, and voila- Creamy soup!! Put the remaining ingredients in the pot while it's still hot and can soften (but not turn to mush) to add some substance. If you like them softer, you can put remaining ingredients in pressure cooker for 5 minutes, just don't blend them when they are done. Add seasoning to taste: Salt, pepper, crushed garlic, and even a little lemon juice to give it a zest of freshness!
